"Need some help?" my waitress asks. "I love talking about the food
here." I bet she does. It's easy to get excited about ribbons of pasta
strewn with buttery bread crumbs, artichokes and sweet blue crab. Or
super-juicy red tomato slices decorated with diced watermelon and a whip
of avocado, lime and cilantro -- a salad encountered over the summer but
still a vivid memory months later. Spice-rubbed bison rib-eye is one of
the best pieces of meat I've ever sliced into, and no less wonderful are
its accompanying creamed Swiss chard and fat, lacy onion rings. Even
chicken tastes new again when it's brined in lemon and oregano (too bad
the bird rests in a messy lake of garlic sauce). While the ownership has
changed at Cashion's Eat Place -- chef Ann Cashion and partner John
Fulchino sold the place to their longtime sous chef, John Manolatos, in
July -- the kitchen's commitment to honest and interesting American
cooking has not. Wise man that he is, Manolatos continues to offer fine
wines, a jazzy soundtrack, one of the city's best cookie plates and
service that feels both fresh and experienced. Cashion's is 12 years old
but still firing on all cylinders.

NOTE: Cashion's serves a reduced menu from midnight until 2 a.m. Friday
