There are as many philosophies about wine as there are grape varietals. I believe that wine should simply be the perfect compliment to an amazing meal. Just as a beautiful score can complete a film, the right wine can make a good meal a great meal; it does so, not by shining in the scene, but by being just the right addition to the stars on the plate. My goal is to provide wines to our guests that help illuminate
Chef Manolatos's dishes in this way.
